Grease Traps v Grease Interceptors
Published: October 28, 2026 / Last Updated: October 28, 2026
Choosing between a grease trap and a grease interceptor starts with understanding how your commercial kitchen handles fats, oils, grease, and wastewater. This grease trap and interceptor comparison explains the practical differences so restaurant managers, business owners, and facility teams can better understand their options.
Magnolia installs, cleans, pumps, repairs, and maintains grease-management systems throughout Washington, DC, Maryland, and Northern Virginia.
What’s the Difference Between a Grease Trap and an Interceptor?
Both systems are designed to separate fats, oils, and grease from wastewater before those materials travel farther into the drainage and sewer system.
The main difference is usually the system’s design, size, location, and how it is rated.
Flow-based grease traps, also called hydromechanical grease interceptors, are generally sized according to wastewater flow rate and are often installed indoors near kitchen fixtures.
Volume-based or gravity grease interceptors are larger systems designed around wastewater volume and retention capacity. They are commonly installed outdoors, underground, or in other areas suitable for larger equipment.
In everyday conversation, the terms are sometimes used interchangeably when describing commercial grease-management equipment.
Which One Do I Need?
The right system depends on your kitchen layout, expected wastewater flow, connected fixtures, available space, and local plumbing requirements.
For example, WSSC Water distinguishes flow-based interceptors from volume-based systems and specifies different design requirements for each. Volume-based interceptors may receive drainage from the entire kitchen, while flow-based systems are sized around the fixtures and wastewater flow connected to them.
That means choosing a system should be based on the facility and not simply whether one option sounds larger or more convenient.
