How Do Grease Traps Work?

Published: October 28, 2026 / Last Updated: October 28, 2026

If you manage a restaurant, commercial kitchen, or other food-service facility, understanding how grease traps work can help you protect your plumbing and plan routine maintenance. Grease traps and grease interceptors collect fats, oils, grease, and solids before they travel farther into the sewer system. Magnolia provides commercial grease trap services throughout Washington, DC, Maryland, and Northern Virginia.

How Does a Grease Trap Work?

A grease trap works by separating fats, oils, and grease-often called FOG-from wastewater before that wastewater enters the sewer.

As wastewater enters the interceptor, the flow slows enough for materials to separate. Fats, oils, and grease rise toward the top, while heavier solids settle toward the bottom. The remaining wastewater can then continue through the outlet toward the sewer system.

Over time, the collected grease and solids take up space inside the interceptor. Pumping and cleaning remove that buildup so the system can continue doing its job.

Why Are Grease Traps Required?

Grease traps help keep FOG out of sanitary sewer lines, where buildup can restrict flow and contribute to blockages and sewer backups.

Requirements vary by jurisdiction and facility type. Within WSSC Water’s service area, food service establishments that discharge grease are required to use an appropriate grease-abatement system. Facility managers should confirm the requirements that apply to their specific property and equipment.
